I tasted this Apple Pie recently in Mortale - it's delicious.

Apple Pie

Rita's Apple Pie is made from dessert apples rather than cooking apples.  Optional extras include brandy, sultanas, cinnamon and two teaspoons of ground almonds in the pastry but the plain version is absolutely delicious in itself.  The key to the pastry is light fingers and cold hands!
Ingredients
Pastry
8 tbsps self raising flour
50 g butter or margarine
2 tbsps caster sugar
1 small egg, beaten with 1 tbsp milk
Pinch of salt

Filling
Dessert Apples, peeled, cored and sliced
2 tbsps sugar

Method

Sieve the flour and salt together in a bowl.  Rub in the butter until the mixture resembles breadcrumbs.  Add the sugar and egg mixture, reserving a small amount of the egg mixture to brush the pastry before cooking.  Bind together to form a dough and allow to rest in the fridge for 20 minutes.

Roll out the pastry into two circles, one large enough to line the base of an 8½ inch dish, the other large enough to cover the pie.  Line the base of the dish, add the sliced apples, cover with sugar and then put the pastry lid on.  Pinch the edges, brush with the egg mixture and make two slits in the top.  Bake in a preheated oven for 30 minutes at 180°C.

Serve hot with cream, ice-cream or custard.
